The beta 2.1 firmware hints at a new iPod Touch model. In the iPhone OS 2.1 file structure, various files display the string "iPod 2,1". The current iPod Touch, however, is referred to as the "iPod 1,1".
The first generation iPhone was referred to as "iPhone 1,1" in various firmware strings, while the 3G was referred to as "iPhone 1,2".
So if you haven’t put the pieces together yet, the change from "1,1" to "1,2" indicates that a new model of the iPod Touch should be expected sometime in the near future.
And since we’re discussing the 2.1 beta firmware, here’s a few other possibilities that were spotted:

The 2.1 beta firmware has signs of something called "Core Location", a feature which can reportedly track your direction and the speed at which you are travelling.
