Many people have been complaining – including myself – about the extremely long, tedious, and annoying backup procedure during the sync from your iPhone to your iTunes.
The syncing process is actually quick on it’s own – it’s the backup procedure that takes ages. That being said, here’s the extremely simple work around.
Simply click the X and the back up will stop. Your syncing will continue, it will just skip the back up process.
However, it’s important to back up your iPhone sometimes – so don’t skip it every time.

Wow…so simple…the iphone itunes sync backup process has been bugging me like crazy…little did i know you can just cancel the iphone backup so easily and continue syncing your iphone to your itunes

i have comodo firewall and i do not let the backup access the internet. then the backup will not start at all. i don’t like stopping it after it’s started. you can probably set any firewall to not allow access
and when you would like to actually do a backup, give it permission from your firewall

I just pressed control-alt-delete and ended the backup apple process that was running. Seems to work (doesn’t end itunes or anything else).

Thanks clbigcl, I also use Comodo and your tip about blocking it with the firewall works like a charm. Now the synch skips this step entirely!

Sometimes this works; sometimes not. Sometimes, it requires starting the synch again and then clicking the x again before it takes and it skips the backup.
Sometimes, it completely ignores my clicking the X and keeps on backing up, backing up.
In those cases, just select quit iTunes and you will be prompted that it will be terminating the backup. Say yes, have iTunes quit, then sync again, being sure to click that pesky X right away.
